doc: refactor BlogPostProvider examples

Goals:

• I copy-pasted the example without reading the doc carefully (my bad), and I ended up with a non-working example that returned no data. I suggest to update the example in order to show that $data should be populated with values from the previous example, so that future readers would end up with a working example
• add full example for Laravel too
